Fake Chicken Selects (healthier)

Just recently McDonald s opened its gates to the drive-thru again and of course me and my sister were first there at 11am. I ordered a chicken burger meal and enjoyed it so much. When it came to tea i was craving another McDonald's meal but rather than wasting petrol, money and time in the drive thru queue i made my own chicken selects with some potato wedges and i served with a side of broccoli to make myself feel better :) I really enjoyed cooking this meal as you can take your time and don't have to rush anything.

This took me 30 minutes to make and serves 1 person
INGREDIENTS-
1 baking potato
low calorie cooking spray
salt and pepper
olive oil
1 chicken breast
4 tablespoons of flour
1 egg, beaten
4 tablespoons of breadcrumbs
paprika
1 mug of broccoli
STEP BY STEP-
1) cut the baking potato into slices and place on a lined baking tray. spray all over with the low calorie cooking spray and then sprinkle with salt and pepper. cook in the oven for 40 minutes.
2) meanwhile put the flour, egg and breadcrumbs in three separate bowls next to each other. cover the chicken breast in flour, then cover in egg then roll the chicken around in the bread crumbs. sprinkle a teaspoon of paprika on eachside, then leave on the side.
3)After 25 minutes of the wedges being in the oven, start cooking the brocoli by steaming them or boiling them. Also heat a tablespoon of olive oil in a frying pan
4) once the oil has heated up, begin to fry the chicken. After frying the chicken for 10 minutes, take from the frying pan, cut into slices and put back in the frying pan for the last 5 minutes of cooking
5) the potato wedges, chicken strips and broccoli should all be ready at the same time.
