Chorizo Spaghetti Bolognese - More Protein!

Everyone in my house loves spaghetti bolognese, i made this to serve 4 people so i could have some for my lunch the next day but there wasn't any left, which i took as positive feedback.

The plan was to make a standard bolognese with just beef mince but we had some chorizo left in the fridge that had to be used in the next few days to i added this in and adapted the herbs and spices to give this classic dish a nice twist. Having two meats in one dish is good for increasing the protein in the meal, this is helpful because if you're anything like me, it is difficult to eat enough protein in one day. This dish has 44grams of protein in :)


Bolognese is one of my favourite meals to eat but it is also great because it includes cheap and common ingredients, it is simple and quick to put together too- Ready in 45 minutes


INGREDIENTS-

low cal cooking spray

250g chorizo, cut into smaller pieces or thin slices

1 red onion, peeled and sliced

2 garlic cloves, peeled and finely chopped

500g beef mince

220ml beef stock

160ml red wine

12 cherry tomatoes, cut in half

1 tablespoon tomato puree

1 teaspoon paprika

2 teaspoons of oregano

1 tablespoon of sugar

salt and pepper

grated parmezan


STEP BY STEP-

1) spray a few sprays of the low cal cooking spray in a large frying pan, add the chorizo and stir until they begin releasing their oils.

2) add the onion and stir for 5 minutes.

3) add the garlic, and beef mince and cook until it is brown.

4) Add beef stock, red wine, cherry tomatoes, tomato puree, paprika, oregano, sugar and season with salt and pepper. stir well until it begins to bubble. Then lower the heat and simmer for 30 minutes.

5) during this time, tidy the mess you have made in the kitchen and with 15 minutes to go cook the spaghetti in salty boiling water.


6) serve with the spaghetti on the bottom and the bolognese on the top, the mixture should have thickened by now. top with grated Parmesan or hard cheese.
