Easy Spaghetti and Meatballs

I havn’t had spaghetti in years and I was like a little kid for the whole day leading up to dinner time today, getting excited for tea time. The meal took me a total of 15 MINUTES to make, which makes it perfect for when our busy lives resume and we need a quick dinner, but still want it to be nutritional and tasty. I made this to serve 3 people, you can freeze the meatballs before cooking them for later or you can put left overs in the fridge after you have cooked them and eat them within 5-6 days.

INGREDIENTS- 3 servings
For the sauce:
Low calorie cooking spray
1 onion, finely chopped
400g tin of chopped tomatoes
1 tablespoon of tomato puree
1 tablespoon of brown sugar
1 tablespoon of balsamic vinegar
1 tablespoon of basil
½ mug of water
Salt and pepper

Spaghetti
For the meatballs:
500g beef mince
½ a red onion, finely chopped
Salt and pepper
Oil to fry
Parmesan to serve
STEP BY STEP-
1) Bring water to the boil in a saucepan, add a teaspoon of salt and then cook the spaghetti for 10 minutes
2) Meanwhile, for the sauce, fry the onions and garlic until the onions begin to soften
3) Add the rest of the ingredients for the sauce and simmer until the mixture begins to thicken
4) As the sauce mixture is simmering, mix the beef mince, chopped onion and salt and pepper together with your hands. Divide into small balls, it should make 12-15 meatballs
5) Heat some oil in a frying pan and add the meatballs. As they begin to brown, turn them so all the sides are brown.
6) Once the meatballs are cooked, the sauce should have thickend. Add the meatballs to the sauce and cover all sides of the meatballs.
7) Drain the spaghetti and serve with the meatballs and sauce on top of the pasta.
I also served this with a sprinkling of parmesan cheese 😊
