Roast Cod and Chorizo Paella

I love cooking things in casserole dishes because they are so easy and really full of flavour. They were really helpful before lockdown; after you get home for the day, you can chuck the ingredients in the casserole dish and leave it in the oven whilst you shower and then you can get things done and eat your dinner fairly quickly. If your anything like me, when you get home after university, college or work your first priority is to make dinner, or everyone around you will have to suffer with your hangryness. This paella is perfect for everyone like me as it is quick and simple to make, as well as containing cheap and easy to find ingredients.


This meal contains a lot of protein from the fish and chorizo meat. cooking it in the casserole dish also contributes to the low fat value of this dish.

SERVES 4- INGREDIENTS- 200g basmati rice 600ml vegetable stock Pinch of tumeric Low calorie cooking spray 1 red onion, peeled and diced 1 pepper, chopped into squares 110g chorizo (or more if you like, this is just what I had left) 1 teaspoon of turmeric 1 teaspoon paprika 2 cod large fillets (roughly 260g), cut into chunks 1 mug of frozen peas Salt and pepper STEP BY STEP- 1)preheat the oven to 190 degrees fan oven 2)add a pinch of turmeric to the vegetable stock 3) heat the low calorie cooking spray in a frying pan and add the onion, peppers and chorizo, fry for 4 minutes. Add the rice and stir so the rice is coated in the oils from the pan. 4) add the begetable stock and bring to the boil. Once bubbling, pour into the casserole dish, cover with a lid or tinfoil and cook for 15 minutes. 5)meanwhile, rub the turmeric and paprika into the cut up fish pieces 6) after 15 minutes, remove the dish from the oven, stir in the peas and the fish. Add more water if necessary. Cover again and cook for another 10 minutes. 7) after 10 minutes, fish should be cooked through and the dish is ready to be served. Serve with crusty bread if you’re feeling more hungry.
