Saturday night= Fajita Night

I love Mexican food so much, chilli, nachos and burritos but my favourite are definitely fajitas. Fajitas are simple to make; they don’t take a long time and they are a good way of getting lots of vegetables inside of you. I made this for 4 people so we could have some for lunch the next day because I know how much I love these fajitas and I knew I would want some more very quickly.

I poached the chicken; this is a good method of cooking the chicken as it avoids the bubbling fats of oils that roasting and frying bring, giving you more, good, and useful protein. I love using tortilla wraps in lots of recipes as they are cheap, filling and can be used for so many different things throughout the week. For example, tortilla wrap pizzas, chicken mayo wraps, nachos or fajitas.



I was making this for 30 minutes to serve 4 people😊

INGREDIENTS:

3 large chicken breasts

Salt and pepper

Low calorie cooking spray

1 red onion, peeled and diced

1 pepper, cut into thin strips

1 courgette, thinly sliced

3 mushrooms, sliced

400g chopped tomatoes

2 teaspoons of paprika

4 tablespoons of sweet chilli sauce (plus extra to serve if you’d like)

8 tortilla wraps (2 each)

8 tablespoons of crème fraiche

Red Leicester cheese, grated

Little gem lettuce

STEP BY STEP-

1) Drop the chicken breasts in a saucepan of salted simmering water, put the lid on and simmer for 12 minutes. Turn off the heat and leave the lid on to stand until you finish the rest of the dish.

2) Spray low calorie cooking spray in a heated frying pan and add the onions to soften for 5 minutes.

3) Add the red pepper, courgette and mushrooms and cook for 5 minutes

4) Add the chopped tomatoes, 1 teaspoon of paprika and mix. Simmer the mixture until it is thickened. Then mix in the sweet chilli sauce and simmer.

5) Whilst the mixture is simmering with the sweet chilli sauce, remove the chicken from the water and place on a chopping board. Using two forks shred the chicken into pieces.

6) Put the chicken, paprika and black pepper in a bowl. Mix until it is all lightly coated.

7) Warm the tortillas in the microwave for 10-15 seconds and serve how you wish

To serve I build my fajita like this: a strip of the vegetable mixture in the middle, handful of shredded chicken on top, a few small dollops of crème fraiche along the middle, sprinkle of grated cheese and then add lettuce on top. Then roll up and enjoy 😊

If you want to reduce the fat use reduced fat cheese and leave out the crème fraiche.
