Shepherd's Pie With An Athletes Twist

Shepherds pie is one of my favourite meals to eat because it is so warming and comforting, but it is often very high in fats and too often doesn't include enough veggies. For this meal i switched normal potato topping for sweet potato which only has 1% fat and the rest of it's energy is released through carbohydrates; therefore it is ideal for athletes trying to stick to 55% carbs and 15% fat. The sweet potato goes well the different veggies i included to give the sheppard's pie more peri peri vibes.


-serves 2(save the other portion for lunch the next day or freeze it for the future)

INGREDIENTS-

low cal cooking spray

250g lamb mince

1 small carrot, diced

1 red onion, peeled and diced

1 celery stick, diced

3 sun-dried tomatoes, diced

1/2 teaspoon of chilli powder

1/2 lemon zest

2 teaspoons of paprika

1 teaspoon of basil

1 teaspoon of oregano

1 tablespoon tomato puree

1 tablespoon of flour

200ml tinned chopped tomatoes

200ml lamb stock (or beef/ vegetable)

1 large sweet potato, sliced

knob of butter

salt and pepper


STEP BY STEP-

1)Preheat the oven to 180 degrees or gas 4

2) Spray a couple of sprays of oil into a pan (or hob to oven dish if you have one) and brown the lamb mince. once it is brown, set to one side.

3)Add the carrot, onion and celery and cook for 8-10 minutes until they are softened.

4) Add sun-dried tomatoes, chilli powder, lemon zest, paprika, basil and oregano, stir well.

5)Add the lamb back to the pan, mix in the tomato puree and flour. cook for 1-2 minutes

6) Add the chopped tomatoes and stock, season with salt and pepper. bring to a simmer.

7) Remove from heat and if using a frying pan, move food into a casserole dish. put sweet potato slices over the top so that they overlap. Dot with butter and season with salt and pepper. Cook in the oven for 1 hour, potatoes should be crispy on the edges.
