Super Simple Chicken Curry

Perfect for lunch time, teatime, and batch cooking to have whenever, this curry is so quick and easy to make. 30 minutes is all it takes to make this delicious, light and healthy curry that can last you 2- 3 meals. The ingredients in this recipe add up to £3.25 from Tesco, meaning it costs £1.65 per meal. (given you already have the spices in the cubard.


This is a great recipe because you can change and adapt the ingredients to your needs and wants by taking out or adding in different meats or vegetables. I made this for dinner at the beginning of the week for me and my sister and I used chickpeas because that is about the only vegetable she can tolerate. When I made it later on in the week, I swapped the chickpeas for a green pepper; if I am honest, I enjoyed it with the pepper more but It was still good with the chickpeas. Next time I make this I am eager to try it with both the chickpeas and pepper so if any of you do put both in, please let me know what it is like.

Makes 2 portions

INGREDIENTS-

Low cal cooking spray

½ can of chickpeas

AND/OR

1 green pepper, thinly sliced

3 garlic gloves, peeled and finely chopped.

400ml of water

3 tablespoons of chilli powder (this is mild so adjust to your liking)

1 tablespoon of turmeric

1 tablespoon of tomato puree

Salt and pepper

SERVE WITH-

½ mug wholegrain rice

1 teaspoon of pilau rice seasoning.




STEP BY STEP-

1) Spray a frying pan with low calorie cooking spray and fry the onion in it for 2 minutes

2) Add the chicken pieces and chickpeas/ peppers and fry until the chicken pieces are brown all over.

3) Add the garlic and cook for another minute

4) Mix in the water, chilli powder, turmeric, and tomato puree. Season with salt and pepper. Bring to the boil and then leave to simmer for 20 minutes

5) Whilst the curry mixture is bring brought up to the boil, boil the kettle and begin cooking the rice. Once the rice’s water starts to boil, add the pilau rice and leave to simmer for 20 minutes.

6) Drain the rice and serve the rice and curry mixture together on the plate.
