Creamy Salmon Pasta

I went away to Norfolk for a week with my family in July to chill for a bit. Whilst we were there we ate a lot of good food and drank a lot of amazing smoothies and milkshakes, I put all the yummy food we bought on my stories throughout the week and saved them to my highlights, so if you’re interested or if you are going to north Norfolk soon, have a look and get some inspiration. One night, we went to my mum’s old friends house where she cooked us dinner. She made for us a beautiful light creamy pasta with a good quantity of salmon chunks in. She also added in mushrooms which were really nice.


I enjoyed this meal so much I wanted to try and recreate it when I got home. My version didn’t include mushrooms in because we didn’t have any in the house at the time, instead I steamed some broccoli and served it on the side, but it would have also been nice if the broccoli was cut smaller and served in the pasta dish. This is a really good meal for students as it is reasonable in price (the salmon makes it a little more expensive) and it only takes 10 minutes to make.

I also served my pasta with some cheesy garlic bread that I made, you can never go wrong with garlic bread and garlic bread really can be a students best friend as one baguette is never more than 40p in a supermarket.



I bought all the ingredients from Tesco and it came to a total of: £3.10, the salmon costing £2.20. £3.10/ 4= 77p per serving

This recipe for salmon pasta serves 4 people and takes 10-15 minutes to make.

INGREDIENTS:

300g pasta

Low calorie cooking spray

2 garlic cloves, chopped

2 red onions, sliced

3 150g salmon fillets, cut into cubes

150ml double cream

2 tbsp parsley

Salt and pepper

1 baguette

40g of butter, melted

1 tablespoon of parsley

3 tablespoons of grated cheddar cheese

STEP BY STEP-

1)Cook the pasta according to the packet instruction in a pan of salted boiling water, then drain. (most pasta takes 10 minutes to cook)

2) slice the garlic bread in 3-centimetre intervals, being careful not to slice all the way through. Mix the parsley and melted butter together and fill the gaps where you sliced the bread. Add cheese to each of these gaps and then bake in the oven on a baking tray for 10 minutes.

3)meanwhile, spray some cooking oil in a pan and cook the garlic and onion for 4 minutes, so the onion is soft.

4) Add the salmon cubes and double cream, cook on a lower heat for 5 minutes, until the salmon has cooked through.

5) stir in the drained pasta and season with salt and pepper. Sprinkle over the parsley and serve.
