Morning Berry Protein Flapjacks

With about 2 months left until everyone goes back to education, I have been getting really excited to get to university. As well, as excitement I have also been wondering how on earth I am going to afford to eat how I have been in lockdown on a student budget(I eat A LOT). I thought I would try and make one of my favourite snacks so that I can knock a recipe down and make it at university, saving me money.



The recipe I came up with makes more, is cheaper and more nutrient dense so I will definitely stick with this recipe. The snack I attempted to recreate is a TREK Morning berry Protein flapjack. They are good to have first thing in the morning before a training session, after a training session or as a snack at any time of the day. I love them as they are easy to carry around all day but are packed with nutrients and they will give me enough energy aswell as keeping me full for a reasonable amount of time. These are also a really good way of increasing your protein intake. This is useful now as gyms have re opened and your legs may be telling you that they need more protein after the first leg day (mine definitely were, walking was a struggle)



Makes 10 and cost £6.05 (including protein powder) (1= 60p)

Trek Bars can be bought in packs of 3 and cost £2.70. (1= 90p)





15 minutes to prepare + 25 minutes in the oven. 40 minutes in total.

INGREDIENTS:

150g butter

150g brown sugar

4.5 tablespoons of honey

300g oats

70g vanilla protein powder

100g frozen or fresh raspberries



STEP BY STEP-

1) Pre-heat the oven to 180 fan oven and line a rectangular baking tray with parchment paper

2) Melt the butter, sugar and honey over a medium heat in a large frying pan.

3) Mix in the protein powder, oats and most of the raspberries

4) Pour the flapjack mixture into the prepared tin. Top with the remaining raspberries and flatten with the back of a tablespoon.

5) Bake in the oven for 25 minutes

6) Leave to cool complete before removing from the tin and cutting into 10 rectangles

7) Store in an airtight container.
