Cherry and Chocolate Brownies

I came across some cherries on offer for very cheap in the supermarket the other day and so I was inspired to take them and bake something with them. At the time I wasn’t sure at all, I thought about cherry bakewell's, cherry and white chocolate cake, cherry cookies. The list was endless but for a lot of these options you need glazed cherries, and I had fresh cherries. I decided on cherry and chocolate brownies. They were a very, very good choice.

INGREDIENTS :
27g butter, softened
375g caster sugar
4 large eggs
75g coco powder
100g self-raising flour
150g milk chocolate
250g resh cherries, pitted
75g dark chocolate
STEP BY STEP-
1) Pre heat your oven to fan 180 degrees and line a rectangle or squares shaped baking tray
2) Mix the butter and sugar together until light and fluffy. Add the self raising flour, eggs and coco powder and mix until smooth.
3) Break up the milk chocolate into chunks. Fold in the chunks of chocolate and most of the pitted cherries.
4) Spoon the mixture into the prepared baking tin and cook for 25 minutes. Once cooked, leave to cool fully
5) Once the brownies are 100% cooled. Melt the dark chocolate in a bowl over a saucepan with boiling water. Pour this dark chocolate to cover the brownie completely. Top with the few remaining cherries and dust with icing sugar.
6)To be enjoyed at whatever time of day and in whatever quantity suits you.
