I had such a craving for chocolate chip cookies but I searched high and low for flour and I couldn’t find any anywhere so I made use of what I had- oats. These cookies taste soo good and they’re soft in the middle and crispy on the outside- just how I would expect normal cookies to be. I didn’t make them with oats aiming for them to be healthier because I enjoy sweet foods anyway but it is an added bonus because I just ate more in one go and told myself it was okay because these are healthy cookies.

These were so easy and quick to make but even easier to eat, they went way to fast and didn’t even last a day in my house.

Only took me 15 minutes in total and it made 10 cookies.

INGREDIENTS:

140g oats, blitzed with a food processor so they are more fine

1/4 tsp salt

1/2 tsp baking soda

4 tbsp brown sugar

4 tbsp caster sugar

65g cup chocolate chips (add more if you want more)

1 tsp vanilla extract

2 tbsp vegetable oil

4 tbsp milk

STEP BY STEP:

1)preheat the oven to 200 degrees fan oven and line a baking tray

2)mix all the dry ingredients together

3)mix in the vanilla extract, vegetable oil and milk to form a dough

4) split the dough into 10 smaller balls and place spaced out on the lined baking tray

5) bake in the oven for 9 minutes

6)leave to cool on the baking tray for another 10 minutes and then enjoy the cookies; soft in the middle and crispy on the edges.

if the cookies havnt flattend when you take them out, push them down with the back of a spoon whilst they cool.
