Summer Cake- Raspberry and White Chocolate Loaf Cake

The sun came out for 2 days and it really made me crave a cake with fruit in, something like a blueberry muffin or pineapple upsidedown cake. We had both raspberries and white chocolate in the house so I went with that and it satisfied my cravings perfectly.

I used fresh raspberries in this as we had them in the fridge and they are so good at the moment as summer is their season, you can use frozen raspberries but they may take longer to bake. To decorate it I used some pink sprinkles, frozen raspberry pieces and some grated white chocolate but it might also be nice to use white chocolate chips or some actual fresh raspberries on top so just have a go with what is available to you.

I got all the ingredients for the cake from Tesco and it came to a total of: £8.84 for the entire cake.
It took 15 minutes to prepare the cake, it spent 1 hour in the oven and then I spent 15 minutes with the decorations. 1 hour 30 minutes is the total time however, this doesn’t include time taken for the cake too cool before decoration.

INGREDIENTS:
For the cake-
200g unsalted butter
200g caster sugar
4 eggs
200g self-raising flour
200g raspberries
150g white chocolate, split into chunks
For the decoration-
100g unsalted butter
200g icing sugar
125g white chocolate
Frozen raspberry pieces
Pink sprinkles
Grated white chocolate
Other ideas:
White chocolate chips
Raspberries
Raspberry coulis
STEP BY STEP-
CAKE

1)Pre- heat the oven to 180c fan and line a loaf tin with parchment paper
2) Beat the butter and sugar together until it is light and fluffy
3) Add in the self-raising flour and eggs. Beat again until smooth.
4) With a spatula or wooden spoon, fold in the raspberries and white chocolate.
5) Pour into the tin and bake in the oven for 55-60 minutes on the bottom shelf so the top doesn’t burn.
6) Leave the cake to cool in the tin for 10 minutes. Then carefully take it out and leave it to cool completely on a wire rack.
DECORATION
1) Melt the white chocolate until smooth and set aside to cool
2) Beat the butter, then add the icing sugar and beat again
3) Add in the melted white chocolate and beat once more.
4) But the butter cream into a piping bag (or sandwhich bag with the corner cut off) and pipe the buttercream onto the cake. You can just spoon It on if you want too.
5) Add whatever toppings you would like
